- 随着畜牧业的现代化、集约化和规模化生产。兽药(包括兽药添加剂)在降低发病率与死亡率、提高饲料利用率、促生长和改善产品品质方面起到十分显著的作用,已成为现代畜牧业不可缺少的物质基础。但是,由于科学知识的缺乏和经济利益的驱使,畜牧业中滥用兽药和超标使用兽药的现象普遍存在。其后果,一方面是导致动物性食品中的兽药残留,摄入人体后影响人类的健康;另一方面,各种养殖场大量排泄物(包括粪便、尿等)向周围环境排放,兽药又成为环境污染物,给生态环境带来不利影响。
兽药残留及其种类
兽药残留(animaldrugresidues)是指给动物使用药物后蓄积和贮存在细胞、组织和器官内的药物原形、代谢产物和药物杂质。近年来,兽药残留在国内外已经成为社会关注的公共卫生问题,与人类的健康息息相关。兽药残留包括兽药在生态环境中的残留和兽药在动物性食品中的残留。动物性食品是指肉(包括肝、肾等内脏)、蛋和乳及其制品的总称随着经济的发展、动物性食品在人们食物总量中的比重越来越大,其卫生安全也倍受关注。
